NBA season is upon us! This season, I have two fantasy teams and have a moderate amount of hope for “my team,” the Phoenix Suns. I type this as I watch the home opener against Dallas. It looks like maybe, just maybe, they will win.

I love basketball season, but with 82 games in a season per team, there are tons of nights where I don’t want to leave my living room because my eyes are glued to the TV. I developed my three ingredient buffalo jackfruit sweet potatoes with sports fans in mind. There are only a few steps!

Step one, bake sweet potatoes in the oven. Step two, pour some buffalo sauce in a skillet with a couple cans of jackfruit, scraping the bottom of the pan during time outs. Step three, assemble. Easy, right?

One of the things you’ll notice about my recipes is that I’m not shy on buffalo flavored things. We never ate wings when I was a kid and I didn’t discover the flavor of buffalo sauce until my early twenties. I believe the first time I tried it was at Green, a vegan restaurant in Tempe. They have a sandwich there called the Original G which has buffalo mock chicken, spring mix, tomatoes, and Vegenaise and it pairs perfectly with their thyme fries. Since my discovery of buffalo, I try “wings” at almost every vegan restaurant I dine at. So far my favorite come from Chicago Diner, so if you’re around that area, be sure to give them a try.

The filling element of this meal comes from sweet potatoes. It seemed like it was only a few years ago when sweet potato fries were the biggest food trend. I never really dug them because I felt like they generally lacked flavor and the texture was too mushy. But they’re so good for you! They’re full of iron, calcium, vitamin B & C – not to mention packed with fiber, so I eat them baked, roasted, and mashed whenever I get a chance.

3 Ingredient Buffalo Roasted Sweet Potatoes

  • Preheat oven to 425 degrees. Poke the sweet potatoes all over with a fork and place on a baking sheet or glass pan. Bake for 45 – 80 minutes until cooked all the way through. 
  • In a skillet, combine jackfruit, water, and buffalo sauce on med-hi until it starts to simmer, then turn to med-lo. Cook the jackfruit for about 30 minutes, stirring every 5-7 minutes to keep the mixture from sticking from the bottom. As the jackfruit continues to cook, you’ll notice it starts to break apart resembling pulled pork. You can also jab it with a fork to help it separate if you get impatient.
  • Cut the sweet potatoes open hotdog style and stuff them with jackfruit. Optionally, drizzle with Oil-Free Hemp Seed Ranch and top with scallions.
