Shifting your perspective is so difficult. I recently had been talking with someone about a new opportunity. One that would really change my life for the better… I thought I had done everything correct in pursuing it, but I found out today that I didn’t make the cut. With that being said, I’m ready to tell 2018 to eat dirt.
How do you all shift perspective when you’ve been let down? Time seems to be a big one for me. I tend to sulk the first day, decompress the second day, and on the third, I feel recovered. Thankfully, my boyfriend has been very sweet tonight – telling stories, making me laugh, etc, so that’s been helping a bit.
Christmas is around the corner and I’m really looking forward to the break from my day job. We’re out on Friday for almost two weeks which I am looking forward to! I’m hoping after that I’ll be able to return to my regular scheduled programming of about two blog entries per week since I won’t have to entertain family or go anywhere for the foreseeable future.
Salads are my favorite. I say it every time, but they’re my go-to work meal because they’re so easy to prepare and there are infinite combinations. I wanted to make a sweet winter salad to go with my clove candied walnuts, and settled on a really nice one with kale, fennel, pomegranate, orzo and more (I’ll post the recipe to this very soon!) with this super easy OJ champagne vinaigrette.
I really like my salads to be low in fat so this dressing, like all the ones I post this OJ champagne vinaigrette has minimal oil. In a weird, but good way this dressing kind of reminds me of Tang. Anyone remember that? Anyways, but it certainly complements this winter salad!
Oh I also want to tell you that one of my favorite bands is called Orange Juice. They’re from the 80s and are rad.

Easy OJ Champagne Vinaigrette
