Don’t worry, I’m not going to write a novel for these. I just wanted to have a blog post dedicated solely to roasted sweet potato pieces because of how versatile they can be. They’re a perfect salad topper, side dish, finger food, snack – you name it!
I feel like I always say “It’s been a crazy week!” but the truth is, it hasn’t. I’ve just been lazy. Summer is setting in, my fractured foot is on its way to recovery, and I just have a hard time balancing all of my hobbies and passions.
In a perfect world, I’d love to have it all balanced but the truth is it’s really, really hard. The cool news is that my boyfriend just purchased the coolest camera that will hopefully let me shoot inside at night with minimal extra setup. This is earth shattering for me because all of my photos are shot in natural light.
Thanks for bearing with me as I figure out how to be a real working adult because this is not easy at all. ????
Making perfect roasted sweet potato pieces is almost as easy as slicing a loaf of bread, or at least I think so.
Step 1: Cut a sweet potato into bite-sized pieces.
Step 2: Line a pan with parchment paper and lightly spray the sweet potato pieces on each side with the oil of your choice.
Step 3: Roast at 400 degrees and flip after 25 minutes.
Step 4: Eat the dang things because what else is there to do?

Perfect Roasted Sweet Potato Pieces
- 1 sweet potato, large
- extra virgin olive oil spray
- Preheat oven to 400 degrees. Cut sweet potato into small bite-sized pieces.
- Line a baking sheet with parchment paper, place sweet potato pieces on on the baking sheet, spray lightly with olive oil, flip pieces and spray again.
- Bake for 25 minutes on one side until the bottoms are golden brown, then flip and bake for 10 minutes on the other side. Serve hot or cold depending on your preference!
