Quick Coconut Bacon!
Well! I have an exciting announcement to make! I landed a new job and started a few weeks ago! It’s a huge adjustment, so you’ll have to bear with me as I get my ducks in a row.
Change is always weird for me. I low key struggle with anxiety and it tends to show its face during times of change, regardless of whether the change is good or bad. Thankfully in this case, it’s GREAT! Unfortunately, my brain doesn’t care.
Between losing my appetite, not sleeping that great, and attempting to adjust to the new place, I’ve let this little side project take a back seat and may have to do that for a few more weeks until I am able to balancing it all again.
Systems are really important to me, so in the next few weeks I’ll attempt to redefine all of it. My last job had a lot of downtime. I could work on my blog there, make coffee there in the AM, and would actually construct my lunches there on the fly. This new place is much (very) different. I now understand the pain my neighbors have of not living near a grocery store as even that routine was compromised.
In the meantime, I hope you all enjoy this recipe for quick coconut bacon! I know there are a million recipes out there for coconut bacon but mine is a little different because it contains whiskey.
I’ve tried so many different variations of this recipe. From using an actual smokebox in the oven to liquid smoke and everything in between, After running some tests, I decided the smokebox didn’t make quite enough of a difference for me to make the official quick coconut bacon ingredients list. But whiskey definitely made the cut.
Why whiskey? I’ve tried many variants of coconut bacon – not just my own but from others as well – and they always come out one-dimensional and sweet. The whiskey rounds out the sweetness and adds some of that savoriness that many vegans often miss from the real thing.
I’m so excited to share with you the upcoming recipes I’ve been incorporating quick coconut bacon into! I’ve been munching on this delicious cobb salad lately which will definitely be featured in the next few weeks as well as savory oatmeal bowls!
The next month or so will definitely be a challenge as I attempt to get my pipeline back in order. For that I apologize profusely. This blog is meant to be a creative and cathartic outlet for me, so I’ve told myself I can’t make it a point of stress in my life… even though that’s not always the case. I guess that’s what happens when you develop a passion for something over time.

Quick Coconut Bacon
Ingredients
- 2 cups flaked coconut
- 2 Tbsp soy sauce
- 1 Tbsp liquid smoke
- 2 tsp whiskey (I used Jameson)
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp mustard powder
- salt & pepper to taste
Instructions
- Preheat oven to 325 degrees. In a mixing bowl, combine all ingredients and stir until evenly incorporated.
- Line a sheet pan with parchment paper and evenly spread the mixture across the pan. Bake for 10 minutes – be careful not to burn. The mixture might still be a little wet when you pull it out, but will dry out if you leave it out for a few hours.
