What a weird week it’s been. Next time I have a holiday in the middle of the week, I’m taking the rest of the week off because this working in the middle of what could’ve been a four day weekend just seems wrong. It’s Saturday today and it feels like a Tuesday? Someone please tell me how that makes any sense at all.
It’s at least been relaxing! On the fourth, I slept in, swam in a pool, drank a lot of White Claw Seltzers and stuffed my face with Beyond Avocado Tacos ????. Seems like a pretty reasonable way to celebrate America I guess?
Every time I post a recipe these days I always say I’m busy and trying to get a handle on things. I’m happy to say at this point in time that I believe I finally have a grasp on my life. Isn’t that one of the best feelings? It’s fleeting, but I’m going to hold onto it as long as possible and take advantage of this time to be mega productive. With that I set a goal to have at least 4 recipes posted in the month of July. This is number two!

One featured ingredient in roasted sweet potato salad that is a little odd is hemp hearts. At first I was a little taken aback by these little seeds. “What am I supposed to do with you?” I thought. Then it came to me – They’re a perfect enhancer to salads, pizza, smoothies, you name it! One tablespoon of hemp hearts has 3.2 grams of protein and 4.9 grams of healthy fat making them a great addition to any meal.
The Process
Salads are always super easy to prepare. Essentially all you need to do to make roasted sweet potato salad is to chop all your ingredients and put them in a big bowl. When you have your sweet potatoes all prepped and ready to go, break out a large salad bowl. Then, add some spring mix to the bowl, top with avocado pieces, shredded red cabbage, thick julienned carrots, and roasted sweet potato pieces. Top with cold sesame ginger sauce and a sprinkle of hemp hearts. Serve immediately.
My favorite thing about roasted sweet potato salad is the largeness of the ingredients – You can tell exactly what’s in it and the colors really pop! Because of its simple ingredients, it’s bound to be a crowdpleaser every time.

Roasted Sweet Potato Salad
Ingredients
- 1 recipe perfect roasted sweet potato pieces
- 1 lb organic spring mix
- 1 cup red cabbage, shredded
- 4 carrots, julienned
- 2 avocados, peeled, pitted, and cut into small pieces
- 4 Tbsp hemp hearts
- 3/4 cup sesame ginger sauce, cold
Instructions
- In a large bowl add spring mix, sweet potato, red cabbage, carrots, and avocado.
- Sprinkle hemp hearts and sesame ginger sauce across salad or serve on the side. Enjoy!
