Vegan Cauliflower Piccata

A simple recipe for cauliflower piccata with crusted cauliflower, baked to perfection and tossed a butter, lemon, white wine, and caper sauce.

  • Preheat oven to 450 degrees. Cut cauliflower into steak-style pieces. It's okay if the ends are cut into florets!
  • Place almonds in a food processor and pulse until coarsely ground. In a shallow bowl, whisk together with flour, nutritional yeast, garlic and onion powder, salt and pepper.
  • Wet each piece of cauliflower with water (I literally just ran them under the sink), coat them with the almond and flour mixture and place on a baking sheet lined with parchment paper. Spray both sides of the cauliflower with olive oil spray and bake for 10 minutes on one side, then 5 minutes on the other. The pieces should be golden brown.
  • While the cauliflower cooks, thinly slice the shallot, and slice one lemon into rings. Add to a skillet with 2 Tbsp butter. Brown the lemon rings on each side for a few minutes and set aside.
  • Add 1Tbsp butter, 2 Tbsp fresh lemon juice from the second lemon, vegetable broth, and white wine to the shallot-butter mixture. Simmer on medium until the contents are reduced by half.
  • Add the cauliflower and capers to the skillet. Baste the cauliflower for 2-3 minutes until the cauliflower has absorbed most of the sauce.
  • Serve with browned lemon rings and fresh chopped parsley.
