Summer is en route and we’re already experiencing some really hot days out here in Phoenix. Chili lime watermelon cucumber salad makes those days feel a little more bearable. What ingredients are in chili lime watermelon cucumber salad?

  • Seedless watermelon
  • Cucumber – I used Persian but you can use any type depending on what’s available at your grocery store. I love a good English cucumber as well.
  • Tajin or your favorite chili lime seasoning
  • Cilantro, jalapeño, and lime for garnish

That’s it. All you need are 5 ingredients and you’re well on your way to making this delicious salad.

How do you make chili lime watermelon cucumber salad?

Glad you asked! Not going to pretend this is a dish that requires any cooking skills. Just chop your watermelon into one-inch cubes, slice your cucumber, jalapeño, and limes and sprinkle, arrange nicely in a bowl or on a plate and sprinkle with Tajin and cilantro. 

I do have a handy trick for cutting a watermelon into squares though. If you trim the sides of the watermelon so it forms a fat disc, you can trim the additional edges without it slipping around and from there cut it into an oblong cube and get squaring away from there. Don’t forget that all watermelon is delicious regardless of what shape it’s in, so don’t beat yourself up if you end up with triangles or other random shapes.

Ingredients

  • 6 cups watermelon
  • 4 Persian cucumbers, (You can also use a regular-sized English cucumber)
  • 1 jalapeño
  • 1 lime
  • 2 Tbsp cilantro
  • 1/2 Tbsp Tajin

Instructions

  • Cut watermelon into 1 inch cubes and arrange on large plate or bowl with thinly sliced cucumber, jalapeño, and half-moon shaped lime slices.
  • Sprinkle with Tajin and chopped cilantro.

I’ve received this question a couple of times about how you’re supposed to eat the limes. You’re supposed to squeeze them on top of the salad as you eat it and discard the rinds. Apologies for any confusion there!

    My life wasn’t complete until I tried this recipe. It’s deceptively simple, but the combination of flavors and textures has made this my go-to salad this summer. FOr awhile there I was eating this recipe weekly! Btw, If you can’t get ahold of some Tajin, Trader Joe’s has a copycat chili & lime spice.
